The magnetic base must be present on the cookware in order to use induction. Below we will discuss what type of cookware is compatible with induction. Online shopping should include “Induction Compatible” as a mark. In-person shopping, you can use a magnet to find all the information you require.

Induction-friendly cookware such as clad stainless is good because it doesn’t scratch glass and can heat quickly. Cast iron, carbon steel, and disc clad aluminum cookware also work, but we recommend good quality clad stainless as the best cookware for induction. We will explain why further down.

Choose good quality clad stainless cookware, because lower quality clad cookware may make noise with induction; natural vibration of induction hobs can make the cookware layers buzz and hum; this generally doesn’t happen with good quality clad stainless (and not at all with cast iron, because–no layers). A good pan is of high quality. Cookware should be heavy, for two reasons. Because heavy pans can withstand intense heat and not warp, they are also more resistant and durable. Second, very lightweight pans may not be detected by an induction burner (particularly true of inexpensive portable induction burners). Even though it’s labeled induction-compatible, a pan might not work with an electric induction burner if it’s too light or too thick. (If you read Amazon reviews of inexpensive “induction-compatible” cookware, you’ll see that many people complain that the large pieces work fine, but the smaller pieces don’t. When this happens, it’s what you see.

Because of the rapid, intense heating caused by induction, the pan must distribute heat evenly. You won’t want to have to worry about food burning or scorching because you don’t want your pan to get hot enough. The bottom must be very heavy and have strong magnetism.

Additionally, converter disks should be avoided. They’re not very good at what they do. They reduce the speed of response, effectively turning an induction burner’s high-powered power into an ordinary electric stove. You can get high quality induction cookware if you make the right investments.
