Abstract

Sulforaphane is an anticarcinogenic chemical that forms when glucoraphanin hydrolyzed in broccoli. Cooking methods have been shown to affect broccoli GLR and SFR levels, but little is known about the effect of lightly cooking processes on them. We investigated the impact of high-temperature low-temperature heating and microwave on GLR/SFR in Broccoli. The GLR and SFR of broccoli were significantly higher in mildly heated and microwaving than those from the raw materials (without any treatment). SFR level at 70°C was not detected, however, was noticeably lower below 40°C. Microwave heating is a more efficient heating method than traditional heating. It increases the SFR and GLR by approximately 80%, at 50°C and 60°C. The SFR content was also affected by the microwave power. At the same temperatures (50 and 60degC), high-power microwave (950 W) with a short time produced over 40% more SFR than low-power microwave treatment (475 W). Hence, mild heating by microwave could increase the GLR and SFR levels in broccoli, and high-power microwave heating with temperature control at 60degC could retain higher bioavailability of these bioactive compounds in broccoli.

2.3 Recipes for Cooking

Two of the most cooking methods used by modern population, different temperature and microwave cooking, were used. The preliminary experimentation with each vegetable was used to determine the best cooking conditions. The temperature was carefully monitored during the cooking process. Ten g of broccoli samples was submerged into 500 ml of water and then subjected to the following cooking treatments. Table S1 lists the parameters. Broccoli crowns were separated as florets only, stems only, and florets together with stems.

Low-temperature cooker: Broccoli and water were added in covered saucepans and heated until 40 to 50 degrees, 60 or 70 degreesC.

Microwave Cooking: Broccoli was placed in boiling water. Then, it was cooked in the microwave at high power (950W), low power (575 W), and then warmed to 40-50, 60, 70, and 70degC.

After they had been cooked, the samples were put in liquid nitrogen to freeze and dried at -20C until analysis. Two of the treated samples weren’t cooked, and were used only as references. We used two batches for all the parameters we tested.

With modifications, the GLs found in frozen-dried vegetable were obtained following an earlier reported process (Lu. Powdered sample (200mg) was extracted using 5 ml of 60:40 methanol and water. The extraction process used sonication at 70 degrees C for 30 min. After being cooled in an ice bath, the extracts were centrifuged at 10,000 x g for 15 min, and the supernatant was filtered through a 0.45 mm nylon filter (Waters Associates) for further ultra-high-performance liquid chromatography (UHPLC) and electrospray ionization (ESI)/ion-trap mass spectrometry (ITMS) analysis.

What Time Can I Microwave Broccoli?

The power of the microwave will determine how long you need to cook the broccoli.

This recipe works well with my 1000W microwave. If you use a higher or lower wattage, you might need to change the time.

Instructions

Microwave broccoli and water in covered bowl on high for 6 minutes or til crisp tender.

Combine the remaining ingredients in a bowl while the food is still cooking.

Drain cooked broccoli.

Mix the lemon garlic and broccoli mixture together.

Use fresh garlic if you use it, then cover the dish and let rest for around two minutes.

If using garlic powder you are ready to serve.

How To Microwave Broccoli:

My corningware, which has been with me for decades, was used. It worked well for our family. I used a 1 1/2-quart casserole. If you are cooking just a single serving then use a smaller container.

Not all recipes require 1″ of water. You can steam your broccoli by heating the water in the microwave. The microwave does not boil the water to steam the broccoli, as I tested it.

How to cut broccoli

We need to chop the broccoli before we can cook it in the microwave.

My aim is to make your broccoli florets appear as beautiful as possible.

They say that you eat your first meal with your eyes. BROCCOLI, that’s what broccoli is. It needs all the help it can get to make your family want to dig in.

The broccoli stem or base should be cut off the florets. My preference is for the stems to be long.

Take a look at how the knife is positioned as closely as you can to the stem.

Although you can also cut the main stalk, it is best to peel the broccoli first. This is the most difficult part.

I save my broccoli stalks for making stocks and soups (like Crockpot Turkey Stock Instant Pot Vegetable Pho Noodle Soup Cut the larger florets in half. Take off the stem, then separate the two halves. This will allow the top-florets to grow naturally.

To ensure that your broccoli pieces cook evenly, you should aim for similar sizes.

Final step: Wash the florets that you just cut.

Abstract
