Companies have used chemicals called perfluoroalky (PFAS), and polyfluoroalkyl substance (PFAS), to make nonstick cookware. The material we’re most familiar with in terms of non-stick pans is polytertrafluoroethylene (PTFE) better known as Teflon.

Since 2006, Teflon has been eliminating certain toxic substances such as PFOA or PFOS. Today, most nonstick cookware in America is free from PFOA and PFOS. If your nonstick potware predates 2006 you might be interested in replacing it.

These chemicals could be in the scrambled eggs. But cranking up the oven temperature can release toxic gases, including PFOA. This is even worse: For hundreds and possibly thousands of decades, these “forever chemical” compounds don’t break down as easily. and have been linked to a lengthy list of conditions including cancer, liver damage, thyroid disease and developmental issues to fetuses/breastfed babies of exposed women.

Also, any nonstick cookware that has developed scratches over the years should be immediately replaced. It’s dangerous for your health, as you could be exposed to toxic chemicals. You can’t trust it to stick if you break it.

What kind of cookware do you use for cooking your food? Truth be told, back in the day, I pretty much only used non-stick pots and pans. They just made cooking so much more convenient bye-bye stuck food and messy pans!

Unfortunately, what I came to learn was that my convenient non-stick pans were coated with a material called polytetrafluoroethylene (PTFE), more commonly known as Teflon, a type of polyfluoroalkyl substance (PFAS), that was most likely emitting toxic fumes and leaching into my food when cooked at high temperatures.

When people speak of toxic ingredients in cookware they are usually referring to PFOA. It is a member of a subset industrial chemicals called perfluoroalkyl substances, PFAS. These chemicals have been used for a while to provide a smooth coating on nonstick materials such as Teflon.

While there are some studies that suggest that PFAS could cause hormone disruptions and reproductive problems in certain animals as well as cancers in people, the exact level at which this can occur is still unknown.

We know from experience that nonstick cookware containing PFOA can release potentially toxic chemicals into the kitchen and onto our plates. If heated to high temperatures, coatings can start to dissolve and emit particles into the atmosphere. When scratched and stirred, some of the chemicals may be incorporated into foods.

For your safety and that of our planet, avoid PFAS. These chemicals are designed to resist water, oils, and grease and can remain in your environment for a long time after being cleaned up.

Ceramic-coated cookware is a great alternative to Teflon, PTFE or other nonstick pans. Ceramic coatings, which are not to be confused for silicone, are made of silicon and don’t use Teflon coatings PFOA, PTFE, or any other category. Ceramic coated pans have 60% lower CO2 emissions than nonstick old-fashioned pans.

However, I have learned from experience that it’s important to select high-quality ceramic coated cookware instead of cheaper ones. There are many ceramic coatings. There are concerns about the use of nanoparticles to make cheap ceramic coatings. Some brands of ceramic coated cookware are not durable.

Because of these concerns, if you feel the need to have a non-stick pan in your kitchen, I recommend sticking with brands that have been certified by third party testing to meet food contact standards set by the U.S. and Europe and to be free from heavy metals and other contaminants. A brand that is willing to submit their tests documents is also important.

The downside to ceramic non-stick pots is their inability to last as long as cast iron and stainless steel. Your pans will eventually wear down and the coating could scratch. Personally, I use my ceramic-coated pans when I really need the non-stick feature (eggs for example), and I stick with stainless steel or cast iron for the majority of my cooking.
