Chloe Jeong / The Spruce Eats Before refrigeration, dehydrating was an early form of food preservation. All it needed was somewhere to store the food and allow the food to dry out. A dehydrator makes fruits and herbs more delicious than when they are fresh.

You can make your own fruit rolls to conserve your homegrown fruits, feed your pet fresh homemade dog treats, and even create your own food dehydrator to dry your produce. Even food drying can be used for dried herbs. It is an excellent way to save money if you have excess fresh herbs.

Because of the precise temperature control system and adequate air circulation, electronic dehydrators are almost impenetrable. Elizabeth L. Andress, Ph.D. is Professor Emerita at the University of Georgia and Extension Food Safety Specialist. “Dehydrators can dry food quickly at 140°F, which is the recommended temperature.” Dehydrators have a heating element and fan, and most are designed to stack several trays to maximize the drying area. There are different sizes depending on the amount of food that you want to dry.

The best food dehydrators will help you make tasty snacks at home.

Our Top Picks Nesco Gardenmaster Food Dehydrator at Amazon The Nesco Gardenmaster comes with four drying trays, but you can also purchase additional trays and stack them up to 20 a time.

7 Best Food Dehydrators, According To Kitchen Appliance Experts

Making homemade apple chips, jerky, and dried mango is easy.

Food preservation is an old and reliable method. By drawing water out of the food it inhibits growth of bacteria. Dehydrated foods can be stored for a long time if dried correctly. It is also a great way to preserve bulk food items such as herbs or mangoes that you have gathered from your garden. Also, dehydration can be used for fresh herbs, which will make them taste more flavorful (great for seasoning steak), and fruit sweeter. Although most foods can be left out to dry naturally in the sunlight or placed in an area that is cool and dry for a while, dehydrators provide faster results in controlled environments.

Kitchen Appliance Lab tested nine top-brand dehydrators. We tried them all in different sizes, shapes, or styles. The performance of the dehydrators was evaluated on their evenness, drying times, and ability to dry jerky and apples. We found most dehydrators to perform the same. The main difference comes down to their ease-of-use: How easy they are for you and your family members, how specific and precise the controls panels and so on. According to our testing, these are the most reliable dehydrators available.

Nesco FD-1018A Flowermaster Dehydrator Best Food Dryer This compact dehydrator dries your food fast and evenly.

$142* from Amazon $142 from Walmart $110 from Wayfair *At the time of publishing, the price was $110.

The Nesco FD-1018A Gardenmaster dehydrator dried apples, meat jerkys, onions, garlic and fruits puree evenly. We didn’t need to watch or shift trays all the way through the drying process. Eight square feet of drying space are available on the eight-tray FD-1018A Gardenmaster, which can be expanded to accommodate up 30 trays. There are eight inserts made of fine mesh that keep tiny bits from getting through cracks. The only other dehydrator that comes with plastic sheets to dry fruit rolls for each tray is the FD-1018A. However, the FD-1018A Gardenmaster is not equipped with a timer and an automatic shutdown. We found this to be inconvenient as you may need to manually check for doneness of your food before shutting off. But if you think you need these features, consider our other pick, the Samson Silent 6-Tray Dehydrator.

Why You Should Trust Us

I’ve spent my entire career working in restaurant, catering, and test kitchens, racking up more than 45,000 hours of hands-on practical cooking experience. It’s not hard to learn a lot about food preservation, cooking, and how it rots. Pân now my knowledge about home drying was restricted to occasional batches of beef jelly. When I was a kid, I stored grapes on my window sill and made my own raisins. My mom wasn’t pleased.

To create this guide I searched for information on dehydration of home foods. It was shocking to see how little reliable, detailed information is available online and in books. I was stunned when Don Mercer, a University of Guelph Associate Professor for South Sudanese Women’s Cooperatives (UNIDO), posted a series of videos to help me. Jay Nutt and Jennifer MacKenzie also co-authored The Dehydrator Biblical. Of the six titles I purchased for this guide, I recommend The Dehydrator Bible above all.

The science in the book was fascinating and I wanted to know more about it. I spoke with MacKenzie and Mercer, who are both home economists. Matt Hartings from American University was also an associate professor in chemistry. We discussed the science behind food drying.

Information regarding dehydrators:

Jerky deshydrators are heat-activated devices that pass heated air through beef to evaporate moisture. The result is Beef Jerky. Two main types of dehydrators are available when searching for units.

A fan is attached to the top or bottom of the tray. It blows air horizontally through the tray to dry the beef. These are usually smaller than those of the “professional” dehydrators.

Professional style units feature a fan that is mounted at the rear and blows air vertically from the front to the rear over the beef. These units tend to be square in construction.

Below is a review of dehydrators that are most commonly used for beef jerky making. Some of the things I took into account when ranking these units included: even heat distribution, unit capacity, running noise level, ease of use, accessories, etc….

*To test the heat of the dehydrators, I put one hotdog in the vicinity of the fan with a temperature probe and the other hotdog at the farthest point from it. I chose hot dogs because they were the same size and an easy constant when determining the internal temp. This allowed me to calculate how long the dehydrator takes to heat up. It also showed the temperature at which the hot dogs reach the safe interior temperature of 160°F. For more safety tips on jerky, click here.

These reviews are strictly reviewing how well these dehydrators are for MAKING BEEF JERKY. They all have capabilities to dry other products such as fruit, but these reviews will focus ONLY on how well they are for making jerky. Let’s get started. Read on to learn which dehydrator is my top pick for Beef Jerky.

If you are looking for a dehydrator to make beef jerky, the Excalibur would be my top choice. You will be immediately impressed by the overall size and capacity, which allows for 6 lbs. of meat drying at once.

This California-made dehydrator features high quality and excellent craftsmanship. The warranty for this unit, which is also the longest warranties of all tested units, runs 10 years. The fan, which is 600 watts in power, can be found at the back of your dehydrator. It blows air horizontally to all 9 trays. The unit can’t take on additional trays to improve its capacity.

Excalibur comes with a temperature controller that can range between 105deg and 165degF. It also has a timer to allow you to let the Excalibur dry for a set amount of time before it automatically turns off.

For the test foods to reach an internal temperature 150degF it took 75 minutes, while 160degF took 180 minutes. The temperature did differ 15degF from the back of the unit (closest to the fan) to the front of the unit. This is why I recommend turning the tray half-way through drying.
